- 1 pound shrimp, peeled and deveined
- 1 bunch asparagus, trimmed and cut into 2-inch pieces
- 1 cup mushrooms, sliced
- 3 tablespoons soy sauce
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- In a large skillet or wok, heat the olive oil over medium-high heat.
- Toss in the minced garlic and ginger, then stir-fry for about 30 seconds until fragrant.
- Add the shrimp to the skillet and cook for 2-3 minutes until they turn pink.
- Add the asparagus and mushrooms, continuing to stir-fry for another 3-4 minutes until the vegetables are tender-crisp.
- Pour in the soy sauce, and season with salt and pepper, stirring to combine.
- Serve hot over rice or noodles.
Notes
For a spicy kick, add red pepper flakes when you add the garlic and ginger. Use tamari for a gluten-free version.
