Description

A quick and flavorful dish featuring tender shrimp, crisp asparagus, and earthy mushrooms, perfect for family dinners or entertaining.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 1 cup mushrooms, sliced
  • 3 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large skillet or wok, heat the olive oil over medium-high heat.
  2. Toss in the minced garlic and ginger, then stir-fry for about 30 seconds until fragrant.
  3. Add the shrimp to the skillet and cook for 2-3 minutes until they turn pink.
  4. Add the asparagus and mushrooms, continuing to stir-fry for another 3-4 minutes until the vegetables are tender-crisp.
  5. Pour in the soy sauce, and season with salt and pepper, stirring to combine.
  6. Serve hot over rice or noodles.

Notes

For a spicy kick, add red pepper flakes when you add the garlic and ginger. Use tamari for a gluten-free version.
