Description

A delightful pasta dish featuring sautéed shrimp, garlic, and cherry tomatoes, all seasoned with zesty lemon and parsley.


Ingredients

  • 8 oz linguine pasta
  • 1 lb fresh shrimp, peeled and deveined
  • 3 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • 1 cup cherry tomatoes, halved
  • ¼ cup fresh parsley, chopped
  • 2 tbsp lemon juice
  • ½ tsp red pepper flakes
  • Salt and pepper to taste

Instructions

  1. Boil a large pot of salted water. Add linguine and cook until al dente, about 9–11 minutes. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Sauté garlic until fragrant, approximately 30 seconds.
  3. Add shrimp to the skillet and cook until pink, about 3–4 minutes.
  4. Stir in cherry tomatoes, red pepper flakes, salt, and pepper. Cook for an additional 2–3 minutes until tomatoes soften.
  5. Combine cooked linguine with shrimp and tomato mixture, tossing gently. Add reserved pasta water if necessary.
  6. Remove from heat, squeeze lemon juice over top, and garnish with parsley before serving.

Notes

Use fresh shrimp for the best flavor. Reserve pasta water for a creamier sauce and adjust spice levels to your preference.
