- 1 lb shrimp (peeled and deveined)
- 8 oz smoked sausage (sliced)
- 1 cup bell peppers (chopped)
- 1 medium onion (chopped)
- 3 cloves garlic (minced)
- 2 cups low-sodium chicken broth
- 2 tsp Cajun seasoning
- 2 tbsp olive oil
- 2 green onions (chopped for garnish)
Instructions
- Prepare your ingredients by chopping the bell peppers and onion. If using frozen shrimp, allow it to thaw completely beforehand.
- In a large skillet over medium heat, add the olive oil and sauté the chopped onion and bell peppers until softened, about 5 minutes.
- Add the sliced smoked sausage to the skillet and cook until browned.
- Stir in the minced garlic and Cajun seasoning, cooking until fragrant.
- Add the rice, stirring well to coat it with the sautéed mixture. Pour in the chicken broth and bring to a boil.
- Reduce heat to low, add the shrimp, cover tightly, and let it simmer for about 20 minutes.
- Once cooked, fluff the rice with a fork, garnish with green onions, and serve hot.
