Description

Ingredients

  • 1 cup long-grain rice
  • 1 lb shrimp (peeled and deveined)
  • 8 oz smoked sausage (sliced)
  • 1 cup bell peppers (chopped)
  • 1 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 2 cups low-sodium chicken broth
  • 2 tsp Cajun seasoning
  • 2 tbsp olive oil
  • 2 green onions (chopped for garnish)

Instructions

  1. Prepare your ingredients by chopping the bell peppers and onion. If using frozen shrimp, allow it to thaw completely beforehand.
  2. In a large skillet over medium heat, add the olive oil and sauté the chopped onion and bell peppers until softened, about 5 minutes.
  3. Add the sliced smoked sausage to the skillet and cook until browned.
  4. Stir in the minced garlic and Cajun seasoning, cooking until fragrant.
  5. Add the rice, stirring well to coat it with the sautéed mixture. Pour in the chicken broth and bring to a boil.
  6. Reduce heat to low, add the shrimp, cover tightly, and let it simmer for about 20 minutes.
  7. Once cooked, fluff the rice with a fork, garnish with green onions, and serve hot.
