- 1 cup long-grain rice
- 1 lb shrimp (peeled and deveined)
- 8 oz smoked sausage (sliced)
- 1 cup bell peppers (chopped)
- 1 medium onion (chopped)
- 3 cloves garlic (minced)
- 2 cups low-sodium chicken broth
- 2 tsp Cajun seasoning
- 2 tbsp olive oil
- 2 green onions (chopped for garnish)
Instructions
- Prepare your ingredients: chop the bell peppers and onion, and thaw the shrimp if frozen.
- In a large skillet over medium heat, add olive oil and sauté the onion and bell peppers until softened, about 3-4 minutes.
- Add the sliced smoked sausage and cook until browned and crispy.
- Stir in the minced garlic and Cajun seasoning; cook until fragrant.
- Add the rice, coat it with flavors, then pour in the chicken broth and bring to a boil.
- Reduce heat to low, add shrimp, cover tightly, and simmer for about 20 minutes until rice is tender.
- Fluff rice with a fork, garnish with green onions, and serve hot.
Notes
Use fresh shrimp for better flavor, and adjust Cajun seasoning to taste.
