Description

Ingredients

  • 1 cup long-grain rice
  • 1 lb shrimp (peeled and deveined)
  • 8 oz smoked sausage (sliced)
  • 1 cup bell peppers (chopped)
  • 1 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 2 cups low-sodium chicken broth
  • 2 tsp Cajun seasoning
  • 2 tbsp olive oil
  • 2 green onions (chopped for garnish)

Instructions

  1. Prepare your ingredients: chop the bell peppers and onion, and thaw the shrimp if frozen.
  2. In a large skillet over medium heat, add olive oil and sauté the onion and bell peppers until softened, about 3-4 minutes.
  3. Add the sliced smoked sausage and cook until browned and crispy.
  4. Stir in the minced garlic and Cajun seasoning; cook until fragrant.
  5. Add the rice, coat it with flavors, then pour in the chicken broth and bring to a boil.
  6. Reduce heat to low, add shrimp, cover tightly, and simmer for about 20 minutes until rice is tender.
  7. Fluff rice with a fork, garnish with green onions, and serve hot.

Notes

Use fresh shrimp for better flavor, and adjust Cajun seasoning to taste.
