Description

A comforting dish featuring shrimp and smoked sausage cooked with spices and rice for a savory one-pot meal.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 pound smoked sausage, sliced
  • 1 cup long-grain rice
  • 3 cups chicken broth
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon thyme
  • 1 teaspoon black pepper
  • ½ teaspoon salt (to taste)
  • 2 tablespoons olive oil
  • 2 green onions, sliced (for garnish)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet over medium heat, drizzle olive oil to heat up.
  2. Add the sliced smoked sausage to the skillet and cook until browned, about 5 minutes.
  3. Stir in the diced onion, bell pepper, and celery. Cook for an additional 4-5 minutes until softened.
  4. Add minced garlic, Cajun seasoning, thyme, black pepper, and salt. Stir for about 1 minute until aromatic.
  5. Pour in the rice and stir well to blend with the sausage and vegetables.
  6. Gradually add chicken broth and bring to a boil.
  7. Once boiling, reduce to low heat, cover, and simmer for about 20 minutes, or until the rice is tender and liquid absorbed.
  8. Gently fold in shrimp and cook for an additional 5 minutes, until shrimp turn pink.
  9. Taste and adjust seasoning as needed.
  10. Fluff rice with a fork before serving and garnish with green onions and parsley.

Notes

This dish is excellent for meal prep and can be stored in the fridge for 3-4 days.
