- 1 pound shrimp, peeled and deveined
- 1 pound smoked sausage, sliced
- 1 cup long-grain rice
- 3 cups chicken broth
- 1 onion, diced
- 1 green bell pepper, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 2 teaspoons Cajun seasoning
- 1 teaspoon thyme
- 1 teaspoon black pepper
- ½ teaspoon salt (to taste)
- 2 tablespoons olive oil
- 2 green onions, sliced (for garnish)
- Fresh parsley, chopped (for garnish)
Instructions
- In a large skillet over medium heat, drizzle olive oil to heat up.
- Add the sliced smoked sausage to the skillet and cook until browned, about 5 minutes.
- Stir in the diced onion, bell pepper, and celery. Cook for an additional 4-5 minutes until softened.
- Add minced garlic, Cajun seasoning, thyme, black pepper, and salt. Stir for about 1 minute until aromatic.
- Pour in the rice and stir well to blend with the sausage and vegetables.
- Gradually add chicken broth and bring to a boil.
- Once boiling, reduce to low heat, cover, and simmer for about 20 minutes, or until the rice is tender and liquid absorbed.
- Gently fold in shrimp and cook for an additional 5 minutes, until shrimp turn pink.
- Taste and adjust seasoning as needed.
- Fluff rice with a fork before serving and garnish with green onions and parsley.
