A delightful twist on dirty rice with fluffy rice, plump shrimp, and smoky sausage, infused with Cajun spices and colorful vegetables.

- 1 cup long-grain rice
- 1 lb shrimp (peeled and deveined)
- 8 oz smoked sausage (sliced)
- 1 cup bell peppers (chopped)
- 1 medium onion (chopped)
- 3 cloves garlic (minced)
- 2 cups low-sodium chicken broth
- 2 tsp Cajun seasoning
- 2 tbsp olive oil
- 2 green onions (chopped for garnish)
Instructions
- Prepare your ingredients by chopping the bell peppers and onion. If using frozen shrimp, allow it to thaw.
- In a large skillet over medium heat, add olive oil. Once hot, sauté the chopped onion and bell peppers until softened, about 4-5 minutes.
- Add the sliced smoked sausage to the skillet and cook until browned, about 5-7 minutes.
- Stir in the minced garlic and Cajun seasoning; cook until fragrant, about 1-2 minutes.
- Add the rice, stirring well to coat it with the flavors. Pour in the chicken broth and bring to a boil.
- Once boiling, reduce heat to low, add the shrimp, cover tightly, and let simmer for about 20 minutes until the rice is tender.
- Fluff the rice with a fork, garnish with the chopped green onions, and serve hot.
Notes
For fluffier rice, rinse it under cold water before cooking. Don’t overcook the shrimp to avoid a rubbery texture.
