  • 10 oz cheese tortellini
  • 3 tbsp butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 3/4 cup grated Parmesan cheese
  • 1 cup fresh spinach (optional)
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp Italian seasoning

Instructions

  1. Cook the Tortellini: Bring a pot of salted water to a boil. Add the tortellini and cook according to package instructions (usually about 3-5 minutes). Reserve 1 cup of pasta water before draining.
  2. Sauté the Shrimp: In a large skillet over medium-high heat, melt 1 tablespoon of butter. Add shrimp seasoned with salt, pepper, and Italian seasoning. Cook for about 2-3 minutes on each side until pink. Remove and set aside.
  3. Prepare the Garlic Sauce: In the same skillet, add remaining butter. Once melted, stir in minced garlic and sauté for about 1 minute until fragrant.
  4. Create the Creamy Base: Pour in heavy cream, reduce heat to medium, and stir for approximately 3-5 minutes until the sauce thickens slightly.
  5. Add Cheese and Spinach: Stir in grated Parmesan until it melts. Add spinach if using and cook until wilted.
  6. Combine Everything: Gently add the tortellini into the sauce, stirring to coat. If the sauce is too thick, add reserved pasta water until desired consistency is reached.
  7. Finish with Shrimp: Return sautéed shrimp to skillet, mixing everything together. Serve hot with extra Parmesan and herbs if desired.

Notes

For a lighter option, substitute butter with olive oil. Feel free to experiment with herbs and add vegetables like cherry tomatoes or zucchini.
