- 1 pound shrimp, peeled and deveined
- 1 package (9 ounces) cheese tortellini
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 tablespoon lemon zest
- 1 tablespoon lemon juice
- Salt and pepper to taste
- 1 tablespoon butter
- Fresh parsley, chopped, for garnish
- Lemon wedges, for serving
Instructions
- Cook the cheese tortellini according to package instructions, about 8 to 10 minutes. Drain and set aside, tossing with a bit of olive oil to prevent sticking.
- In a large skillet, heat olive oil over medium heat. Add the shrimp in a single layer and cook for 2-3 minutes on each side until pink and opaque. Remove from skillet and set aside.
- Add minced garlic to the same skillet and sauté for about one minute until fragrant.
- Pour in the heavy cream and bring to a gentle simmer. Stir in grated Parmesan cheese until melted and sauce thickens.
- Stir in lemon zest and lemon juice, seasoning with salt and pepper to taste.
- Add a tablespoon of butter and melt into the sauce. Toss shrimp and tortellini in the skillet until well-coated in sauce.
- Garnish with freshly chopped parsley and serve hot with lemon wedges.
Notes
Don’t overcook the shrimp and use fresh ingredients for the best flavor. This dish is great for meal prep and can be stored in the fridge for up to three days.
