  • 1 pound shrimp, peeled and deveined
  • 1 package (9 ounces) cheese tortellini
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon lemon zest
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • 1 tablespoon butter
  • Fresh parsley, chopped, for garnish
  • Lemon wedges, for serving

Instructions

  1. Cook the cheese tortellini according to the package instructions and set aside.
  2. In a large skillet, heat the olive oil over medium heat and add the shrimp. Cook until pink and opaque, then remove and keep warm.
  3. Sautรฉ the minced garlic in the same skillet for about 1 minute.
  4. Pour in the heavy cream, bring to a simmer, then stir in the Parmesan cheese until melted.
  5. Add lemon zest and juice, and season with salt and pepper.
  6. Stir in butter until melted, then add the cooked shrimp and tortellini, tossing to coat.
  7. Garnish with chopped parsley and serve with lemon wedges.
