- 1 pound shrimp, peeled and deveined
- 1 package (9 ounces) cheese tortellini
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 tablespoon lemon zest
- 1 tablespoon lemon juice
- Salt and pepper to taste
- 1 tablespoon butter
- Fresh parsley, chopped, for garnish
- Lemon wedges, for serving
Instructions
- Cook the cheese tortellini according to the package instructions. Once cooked, drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the shrimp and cook for 2-3 minutes on each side until pink and opaque.
- Transfer the shrimp to a plate and set aside. In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
- Pour in heavy cream and bring to a simmer. Stir in Parmesan cheese until melted and sauce thickens slightly.
- Add lemon zest and lemon juice to the sauce, seasoning with salt and pepper to taste.
- Stir in butter until melted and incorporated into the sauce.
- Add the cooked shrimp and tortellini, gently tossing until well-coated in the sauce. Garnish with parsley and serve with lemon wedges.
Notes
For additional flavor, consider adding red pepper flakes or experimenting with different cheeses like feta or goat cheese.
