Description

A delicious and healthier broccoli cheese casserole combining fresh broccoli and cauliflower rice with creamy cheese.


Ingredients

  • 8 cups raw broccoli florets
  • 1 bag (12 oz) frozen cauliflower rice
  • 1/4 cup olive oil
  • 1/4 cup flour
  • 1/4 teaspoon garlic powder
  • 3/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 cups broth (vegetable or chicken)
  • 1/4 cup milk (whole or 2%)
  • 2 cups cheddar cheese
  • 1 cup Parmesan cheese
  • 1 teaspoon olive oil
  • 1/2 cup panko
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Steam the broccoli by microwaving it in a large bowl for 3-5 minutes.
  3. In a large skillet, pour 1/4 cup of olive oil over medium-high heat.
  4. Add the frozen cauliflower rice and sauté until thawed, about 5-7 minutes.
  5. Sprinkle in the flour, garlic powder, salt, and pepper. Stir until the flour absorbs the oil.
  6. Gradually pour in the broth and milk, stirring until the mixture simmers and thickens (about 7-8 minutes).
  7. Turn off the heat, add the cheddar and Parmesan cheese, and stir until melted.
  8. Add the steamed broccoli and mix everything together.
  9. Pour the mixture into a casserole dish.
  10. For topping, mix the olive oil, Panko, and parsley, then sprinkle on top.
  11. Bake for 25-30 minutes until golden brown.

Notes

Store leftovers in an airtight container; they will remain fresh for 3-4 days in the refrigerator and can be frozen for up to 3 months.
