A hearty casserole that combines the flavors of classic Sloppy Joe sandwiches with gooey melted cheese and pasta.

- 1 lb ground beef
- 2 (15 oz) cans sloppy joe sauce
- 2 cups cheddar cheese, divided
- 1 green pepper, diced
- 1 (16 oz) pkg rotini, cooked
- 1 small onion, diced
Instructions
- Heat a large pan over medium heat. Add ground beef, diced green pepper, and onion. Cook until the beef is no longer pink and the veggies are tender. Drain any excess fat.
- Pour in the sloppy joe sauce and stir to combine. Allow it to heat for a couple of minutes until it simmers gently.
- Add the cooked rotini pasta to the pan, stirring to coat the pasta evenly with the meat and sauce mixture.
- Sprinkle in 1 to 1.5 cups of shredded cheddar cheese and stir until the cheese is fully melted and combined.
- Reduce the heat to low and blend in the remaining cheese, stirring until melted and creamy. Serve hot, garnished with parsley if desired.
Notes
For a vegan version, substitute the ground beef with lentils or a plant-based meat substitute and use vegan cheese. You can prepare this casserole in advance by assembling it up to cheese topping and refrigerating it until ready to bake.
