Description

A hearty casserole that combines the flavors of classic Sloppy Joe sandwiches with gooey melted cheese and pasta.


Ingredients

  • 1 lb ground beef
  • 2 (15 oz) cans sloppy joe sauce
  • 2 cups cheddar cheese, divided
  • 1 green pepper, diced
  • 1 (16 oz) pkg rotini, cooked
  • 1 small onion, diced

Instructions

  1. Heat a large pan over medium heat. Add ground beef, diced green pepper, and onion. Cook until the beef is no longer pink and the veggies are tender. Drain any excess fat.
  2. Pour in the sloppy joe sauce and stir to combine. Allow it to heat for a couple of minutes until it simmers gently.
  3. Add the cooked rotini pasta to the pan, stirring to coat the pasta evenly with the meat and sauce mixture.
  4. Sprinkle in 1 to 1.5 cups of shredded cheddar cheese and stir until the cheese is fully melted and combined.
  5. Reduce the heat to low and blend in the remaining cheese, stirring until melted and creamy. Serve hot, garnished with parsley if desired.

Notes

For a vegan version, substitute the ground beef with lentils or a plant-based meat substitute and use vegan cheese. You can prepare this casserole in advance by assembling it up to cheese topping and refrigerating it until ready to bake.
