- 4 pounds beef short ribs
- 2 cups apple cider
- 1 large onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon thyme
- 1 bay leaf
Instructions
- Preheat your oven to 300°F (150°C).
- In a large Dutch oven, heat olive oil over medium-high heat. Brown the short ribs on all sides.
- Remove the short ribs, then add onion, carrots, celery, and garlic to the pot and sauté for 5-7 minutes.
- Return the short ribs to the pot, add apple cider, and season with salt, pepper, thyme, and bay leaf.
- Cover and transfer to the oven. Cook for 3 to 4 hours until tender.
- Serve the ribs with the cooking liquid and vegetables.
