Ingredients

  • 4 pounds beef short ribs
  • 2 cups apple cider
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon thyme
  • 1 bay leaf

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. In a large Dutch oven, heat olive oil over medium-high heat. Brown the short ribs on all sides.
  3. Remove the short ribs, then add onion, carrots, celery, and garlic to the pot and sauté for 5-7 minutes.
  4. Return the short ribs to the pot, add apple cider, and season with salt, pepper, thyme, and bay leaf.
  5. Cover and transfer to the oven. Cook for 3 to 4 hours until tender.
  6. Serve the ribs with the cooking liquid and vegetables.
