Ingredients

  • 1 lb beef (chuck or brisket)
  • 4 cups beef broth
  • 2 tablespoons soy sauce
  • 1 tablespoon miso paste
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger, grated
  • 4 oz ramen noodles
  • 2 soft-boiled eggs (optional)
  • Fresh greens (spinach, bok choy, etc.)
  • Crunchy vegetables (carrots, bell peppers, etc.)
  • Green onions, sliced
  • Sesame seeds (for garnish)

Instructions

  1. In a slow cooker, add the beef, beef broth, soy sauce, miso paste, garlic powder, and ginger.
  2. Cover and cook on low for 6-8 hours or until the beef is tender.
  3. Remove the beef and shred it with two forks, then return it to the slow cooker.
  4. Cook the ramen noodles according to package instructions.
  5. Serve the broth with the noodles, topped with the shredded beef, soft-boiled eggs, fresh greens, crunchy vegetables, green onions, and sesame seeds.

Notes

Avoid lean cuts like sirloin for best results. Adjust broth seasoning to taste before serving. Store leftovers in an airtight container.
