- 3 potatoes, diced

- 4 cups beef broth

- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 bay leaf

Instructions
- Brown the Beef: Heat the olive oil in a skillet over medium heat. Add the beef and brown on all sides.
- Layer the Vegetables: Transfer the browned beef to the slow cooker and add the carrots, potatoes, onion, and garlic.
- Prepare the Broth Mixture: Combine beef broth, tomato paste, Worcestershire sauce, thyme, bay leaf, salt, and pepper. Pour over the beef and vegetables.
- Set and Forget: Cover and cook on low for 7-8 hours or on high for 4-5 hours.
- Finish and Serve: Discard the bay leaf and serve your comforting beef stew.
