Instructions
- Place the chicken breasts at the bottom of the slow cooker.
- Add the rice, onion, garlic, mixed vegetables, salt, pepper, and thyme over the chicken.
- Pour the chicken broth over the ingredients, ensuring everything is submerged.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is cooked through and rice is tender.
- Shred the chicken with two forks and mix everything before serving.
Notes
Use bone-in chicken for added flavor, don’t skip the garlic and onions, and adjust seasonings to taste.
