- 1 lb tough beef (chuck or brisket)
- 4 cups beef broth
- 2 tablespoons curry powder
- 1 tablespoon soy sauce
- 2 cups ramen noodles
- 1 can coconut milk
- 1 onion, diced
- 3 cloves garlic, minced
- 1 teaspoon ginger, minced
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Place the beef in the slow cooker.
- In a bowl, mix together beef broth, curry powder, soy sauce, diced onion, garlic, ginger, salt, and pepper. Pour the mixture over the beef.
- Cook on low for 6-8 hours or until the beef is tender.
- Once the beef is cooked, shred it using two forks.
- Stir in the coconut milk and ramen noodles. Cover and cook for an additional 10-15 minutes until the noodles are tender.
- Serve hot, topped with chopped green onions.
Notes
Avoid lean cuts of beef which can dry out. Add noodles towards the end to prevent mushiness.
