Description

A delightful twist on classic ramen, combining tender beef and aromatic spices for a rich, comforting bowl of goodness.


Ingredients

  • 1 lb tough beef (chuck or brisket)
  • 4 cups beef broth
  • 2 tablespoons curry powder
  • 1 tablespoon soy sauce
  • 2 cups ramen noodles
  • 1 can coconut milk
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Place the beef in the slow cooker.
  2. In a bowl, mix together beef broth, curry powder, soy sauce, diced onion, garlic, ginger, salt, and pepper. Pour the mixture over the beef.
  3. Cook on low for 6-8 hours or until the beef is tender.
  4. Once the beef is cooked, shred it using two forks.
  5. Stir in the coconut milk and ramen noodles. Cover and cook for an additional 10-15 minutes until the noodles are tender.
  6. Serve hot, topped with chopped green onions.

Notes

Avoid lean cuts of beef which can dry out. Add noodles towards the end to prevent mushiness.
