Description

A hearty and comforting dish of tender beef bites and fluffy potatoes cooked in a rich garlic butter sauce, perfect for family dinners or meal prep.


Ingredients

  • 2 lbs beef stew meat or sirloin, cubed
  • 1½ lbs baby potatoes, halved
  • 4 tablespoons unsalted butter, melted
  • 5 cloves garlic, finely minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • Fresh parsley, for garnish (optional)

Instructions

  1. Season the beef chunks generously with salt, pepper, onion powder, and thyme. In a large bowl, mix well and then place in the slow cooker with the halved baby potatoes.
  2. In a separate bowl, combine melted butter with minced garlic and Worcestershire sauce. Pour this sauce over the beef and potatoes.
  3. Cover and set the slow cooker to LOW for 6 to 8 hours or HIGH for 3 to 4 hours until the beef is fork-tender and the potatoes are soft.
  4. Before serving, stir gently and sprinkle with freshly chopped parsley for garnish.

Notes

For more flavor, consider browning the beef before slow cooking, adding fresh herbs, or adjust spices to personal preference.
