Description

A tender and flavorful Slow Cooker Korean Beef dish made with beef chuck roast, savory sauce, and vibrant flavors, perfect for cozy dinners.


Ingredients

  • 2 lbs beef chuck roast
  • 1 cup beef broth
  • 1/2 cup soy sauce
  • 1/3 cup brown sugar
  • 1 tablespoon sesame oil
  • 6 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 1 tablespoon rice vinegar
  • 1 tablespoon sriracha sauce (adjust to taste)
  • 1/2 teaspoon ground black pepper
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water
  • 1/4 cup chopped green onions (for garnish)
  • Sesame seeds (for garnish)

Instructions

  1. Place the beef chuck roast in your slow cooker.
  2. In a medium bowl, whisk together the beef broth, soy sauce, brown sugar, sesame oil, minced garlic, grated ginger, rice vinegar, sriracha sauce, and ground black pepper until fully combined.
  3. Pour the sauce mixture over the chuck roast in the slow cooker, ensuring it’s well-covered.
  4. Cover and cook on low for 7-8 hours, or on high for 3-4 hours, until the beef becomes tender.
  5. Carefully remove the beef and shred it using two forks.
  6. In a small bowl, mix the cornstarch and cold water to create a slurry. Stir into the slow cooker to thicken the sauce for an additional 15-20 minutes on high.
  7. Serve the Korean Beef over cooked rice and garnish with chopped green onions and sesame seeds.

Notes

For a milder dish, reduce the sriracha. You can marinate the beef in the sauce for enhanced flavors.
