Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups of rice
  • 4 cups of chicken broth
  • 1 lemon (juiced and zested)
  • 2 tablespoons olive oil
  • 2 cloves garlic (minced)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a slow cooker, combine the chicken breasts, rice, chicken broth, lemon juice, lemon zest, olive oil, garlic, thyme, rosemary, salt, and pepper.
  2. Stir to mix all the ingredients together until well combined.
  3. Cover and cook on low for 240-360 minutes. Check that the chicken is cooked through and the rice is tender.
  4. Once done, shred the chicken in the slow cooker and mix it with the rice and juices before serving.
