- 4 boneless, skinless chicken breasts
- 2 cups of rice
- 4 cups of chicken broth
- 1 lemon (juiced and zested)
- 2 tablespoons olive oil
- 2 cloves garlic (minced)
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a slow cooker, combine the chicken breasts, rice, chicken broth, lemon juice, lemon zest, olive oil, garlic, thyme, rosemary, salt, and pepper.
- Stir to mix all the ingredients together until well combined.
- Cover and cook on low for 240-360 minutes. Check that the chicken is cooked through and the rice is tender.
- Once done, shred the chicken in the slow cooker and mix it with the rice and juices before serving.
- Serve garnished with fresh parsley.
