- 4 cups potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 cup heavy cream

Instructions
- In a skillet, heat the ground beef over medium heat. Use a spatula to break it apart as it cooks. Once browned, drain any excess fat.
- Transfer the browned beef to a slow cooker and add in the diced potatoes, chopped onion, minced garlic, beef broth, thyme, and paprika. Stir well.
- Cover your slow cooker and set it to cook on low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, stir in the heavy cream to enhance richness.
- Taste and season with salt and pepper as desired before serving.
Notes
Browning the beef enhances flavor; use waxy potatoes for the best texture. Add greens like spinach or kale towards the end for extra nutrition.
