Ingredients

- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 2 cups of sliced mushrooms
- 1 cup of Marsala wine
- 2 cups of chicken broth
- 1 tablespoon of olive oil
- 1 teaspoon garlic, minced
- 1 teaspoon Italian seasoning
- Fresh parsley for garnish
Instructions
- Season the chicken breasts with salt and pepper on both sides.
- Heat olive oil in a skillet over medium heat. Sear the chicken breasts for about 2-3 minutes on each side until golden brown, then transfer to the slow cooker.
- In the same skillet, add sliced mushrooms and garlic, sautéing until the mushrooms are tender. Deglaze the pan with Marsala wine, scraping up any brown bits.
- Pour the mixture over the chicken in the slow cooker. Add chicken broth and Italian seasoning.
- Cover and cook on low for 6 hours or high for 3 hours, until the chicken is cooked through and tender.
- Garnish with fresh parsley before serving.
Notes
For added flavor, you can use different types of mushrooms or add vegetables like spinach or peas in the last hour of cooking.
