  • 1 tsp smoked paprika

  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup cooked black beans
  • 1 cup corn (grilled, roasted, or canned)
  • 1 piece avocado, sliced
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup sour cream or Greek yogurt
  • 1 tbsp chipotle peppers in adobo, minced
  • 1 tsp garlic powder
  • 1 tsp honey
  • 2 tbsp lime juice (for sauce)

Instructions

  1. Marinate the Chicken: In a bowl, mix the olive oil, lime juice, minced garlic, chipotle chili powder, smoked paprika, cumin, salt, black pepper, and some chopped cilantro. Add the chicken and coat it well. Let it marinate for at least 30 minutes (or longer for better flavor).
  2. Cook the Chicken: Heat a skillet over medium heat. Add the marinated chicken and cook for about 6-7 minutes on each side, or until it’s cooked through and has a nice char. Remove from heat and let it rest for a few minutes before slicing.
  3. Prepare the Creamy Sauce: In a small bowl, mix the sour cream or Greek yogurt, minced chipotle peppers in adobo, garlic powder, honey, and lime juice. Stir until smooth and creamy.
  4. Assemble the Bowl: In a serving bowl, layer black beans, corn, sliced chicken, and avocado. Drizzle the creamy sauce over the top and garnish with fresh cilantro.
