A delightful twist on the classic campfire treat, these S’mores Cookie Bars combine chocolate, marshmallows, and graham crackers into a chewy dessert.

- 1 cup unsalted butter, softened
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup chocolate chips
- 1 cup mini marshmallows
- 1 cup graham cracker crumbs
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- Cream together the softened butter, brown sugar, and granulated sugar in a large bowl until smooth and fluffy.
- Beat in the eggs one at a time, mixing well after each addition, and then stir in the vanilla extract.
- In a separate bowl, combine the flour, baking soda, and salt, then gradually fold this mixture into the creamed mixture.
- Gently fold in the chocolate chips and graham cracker crumbs.
- Spread half of the cookie dough into the prepared pan.
- Evenly sprinkle the mini marshmallows on top.
- Spread the remaining dough over the marshmallows.
- Bake for 25-30 minutes or until golden brown and a toothpick comes out clean.
- Allow to cool before cutting into squares.
Notes
For best results, ensure butter is softened and don’t overmix. You can customize toppings to your liking.
