Description

A delightful twist on the classic campfire treat, these S’mores Cookie Bars combine chocolate, marshmallows, and graham crackers into a chewy dessert.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips
  • 1 cup mini marshmallows
  • 1 cup graham cracker crumbs

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. Cream together the softened butter, brown sugar, and granulated sugar in a large bowl until smooth and fluffy.
  3. Beat in the eggs one at a time, mixing well after each addition, and then stir in the vanilla extract.
  4. In a separate bowl, combine the flour, baking soda, and salt, then gradually fold this mixture into the creamed mixture.
  5. Gently fold in the chocolate chips and graham cracker crumbs.
  6. Spread half of the cookie dough into the prepared pan.
  7. Evenly sprinkle the mini marshmallows on top.
  8. Spread the remaining dough over the marshmallows.
  9. Bake for 25-30 minutes or until golden brown and a toothpick comes out clean.
  10. Allow to cool before cutting into squares.

Notes

For best results, ensure butter is softened and don’t overmix. You can customize toppings to your liking.
