Instructions
- Heat olive oil in a large pot over medium heat.
- Season chicken thighs with salt, pepper, and paprika; brown in the pot for about 5 minutes on each side.
- Remove the chicken and set aside.
- In the same pot, add diced onion and garlic; sauté until translucent.
- Stir in rice and cook for 1-2 minutes.
- Add chicken broth and cream of mushroom soup; mix well.
- Place browned chicken back into the pot, ensuring it’s immersed in the mixture.
- Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes until rice is cooked and chicken is tender.
