- 4 skin-on chicken thighs (about 1.5 lbs)
- 1 medium onion, sliced
- 3 cloves garlic, minced
- 2 cups low-sodium chicken broth
- 1 cup heavy cream
- 1/4 cup all-purpose flour
- 2 tsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp smoked paprika
- 1 tsp fresh thyme (or 1/2 tsp dried thyme)
- 2 tbsp soy sauce
Instructions
- Season the chicken thighs with salt, black pepper, and smoked paprika and let them sit at room temperature for about 15 minutes.
- Heat olive oil in a large skillet over medium heat. Add onions and cook until translucent, about 4–5 minutes. Stir in minced garlic for roughly 1 minute until fragrant.
- Place the seasoned chicken thighs skin-side down in the skillet and brown each side for about 5 minutes.
- Remove the chicken temporarily and sprinkle flour into the drippings. Stir to create a roux and cook briefly.
- Gradually whisk in chicken broth and soy sauce until smooth, then stir in heavy cream and thyme. Return chicken to skillet, cover, and let simmer on low for 20-25 minutes until tender.
Notes
Let the chicken rest before cooking for even texture. Use low-sodium chicken broth and consider homemade for best flavor.
