Description

Delightful soft and chewy gingerbread men cookies, perfect for holiday gatherings and decorating.


Ingredients

  • 3/4 cup unsalted butter, melted
  • 3/4 cup brown sugar
  • 3/4 cup molasses
  • 1/2 tsp vanilla extract
  • 1/2 tsp salt
  • 1 Tbsp ground cinnamon
  • 1 Tbsp ground ginger
  • 1/2 tsp nutmeg
  • 1/2 tsp cloves
  • 1 whole egg
  • 1 tsp baking soda
  • 3 to 3 1/4 cups all-purpose flour
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • 34 Tbsp milk (whole or reduced fat)
  • Decorative candies or sprinkles (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). In a large mixing bowl, combine the melted butter and brown sugar using a whisk until smooth. Add molasses and vanilla extract.
  2. In a separate bowl, mix the dry ingredients: salt, cinnamon, ginger, nutmeg, cloves, and baking soda, then gradually add to the wet mixture.
  3. Gradually add in the flour, starting with 3 cups. The dough should be soft but not sticky. Chill in the refrigerator for about 30 minutes.
  4. Roll out the chilled dough on a floured surface to about 1/4 inch thick. Use cookie cutters for gingerbread men shapes and place on a baking sheet.
  5. Bake for 10-12 minutes or until firm. Allow to cool before decorating with icing made from powdered sugar, vanilla, and milk.

Notes

Chill the dough for easier rolling. Use a toothpick for fine icing details. Adjust spices to preference.
