Delightful soft and chewy gingerbread men cookies, perfect for holiday gatherings and decorating.

- 3/4 cup unsalted butter, melted
- 3/4 cup brown sugar
- 3/4 cup molasses
- 1/2 tsp vanilla extract
- 1/2 tsp salt
- 1 Tbsp ground cinnamon
- 1 Tbsp ground ginger
- 1/2 tsp nutmeg
- 1/2 tsp cloves
- 1 whole egg
- 1 tsp baking soda
- 3 to 3 1/4 cups all-purpose flour
- 2 cups powdered sugar
- 1 tsp vanilla extract
- 3–4 Tbsp milk (whole or reduced fat)
- Decorative candies or sprinkles (optional)
Instructions
- Preheat your oven to 350°F (175°C). In a large mixing bowl, combine the melted butter and brown sugar using a whisk until smooth. Add molasses and vanilla extract.
- In a separate bowl, mix the dry ingredients: salt, cinnamon, ginger, nutmeg, cloves, and baking soda, then gradually add to the wet mixture.
- Gradually add in the flour, starting with 3 cups. The dough should be soft but not sticky. Chill in the refrigerator for about 30 minutes.
- Roll out the chilled dough on a floured surface to about 1/4 inch thick. Use cookie cutters for gingerbread men shapes and place on a baking sheet.
- Bake for 10-12 minutes or until firm. Allow to cool before decorating with icing made from powdered sugar, vanilla, and milk.
Notes
Chill the dough for easier rolling. Use a toothpick for fine icing details. Adjust spices to preference.
