- 1/2 teaspoon salt
- 3/4 cup unsalted butter, softened (1 1/2 sticks)
- 3/4 cup light brown sugar (packed)
- 1/2 cup molasses
- 1 large egg (room temperature)
- 2 1/2 cups powdered sugar
- 4 tablespoons warm water
- 2 tablespoons meringue powder
- 1/2 teaspoon cream of tartar
- Sprinkles of your choice
Instructions
- In a large bowl, whisk together the flour, ginger, cinnamon, cloves, nutmeg, baking soda, and salt.
- Cream together the softened butter and brown sugar until light and fluffy. Add the molasses and egg, then mix well.
- Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.
- Divide the dough into two discs, wrap them in plastic wrap, and refrigerate for at least 1 hour.
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper. Roll out the chilled dough to about 1/4-inch thick and cut out shapes using a gingerbread man cookie cutter.
- Place the cut-outs on the baking sheets and bake for 10-12 minutes. Allow to cool completely before decorating.
- For the royal icing, combine the powdered sugar, warm water, meringue powder, and cream of tartar in a mixing bowl. Beat until stiff peaks form.
- Use the icing to decorate cookies, adding sprinkles as desired.
Notes
Chill the dough for better texture and flavor. Ensure to use room temperature egg for optimal mixing. Bake until firm, as cookies will continue to firm up while cooling.
