- 1 cup (226g) unsalted butter, softened
- 3/4 cup (150g) granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups (250g) all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup (100g) light brown sugar
- 2 tablespoons ground cinnamon
- 1 tablespoon (14g) unsalted butter, melted
Instructions
- Preheat your oven to 375°F (190°C) and line two baking sheets with parchment paper.
- Cream together the softened butter and granulated sugar until light and fluffy.
- Add the egg and vanilla extract to the butter-sugar mixture and mix until well combined.
- In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until the dough comes together.
- Mix the light brown sugar and ground cinnamon in a small bowl.
- Roll out the cookie dough to about 1/4 inch thickness on a lightly floured surface.
- Brush melted butter over the rolled-out dough, then sprinkle the cinnamon-sugar mixture evenly on top.
- Carefully roll the dough into a log shape and cut it into 1/2 inch thick slices.
- Place the slices onto the prepared baking sheets and bake for 10-12 minutes or until the edges are lightly golden.
- Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
