Description

Delicious cookies that combine the flavors of cinnamon rolls into a convenient, bite-sized form.


Ingredients

  • 1 cup (226g) unsalted butter, softened
  • 3/4 cup (150g) granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (100g) light brown sugar
  • 2 tablespoons ground cinnamon
  • 1 tablespoon (14g) unsalted butter, melted

Instructions

  1. Preheat your oven to 375°F (190°C) and line two baking sheets with parchment paper.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the egg and vanilla extract to the butter-sugar mixture and mix until well combined.
  4. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until the dough comes together.
  6. Mix the light brown sugar and ground cinnamon in a small bowl.
  7. Roll out the cookie dough to about 1/4 inch thickness on a lightly floured surface.
  8. Brush melted butter over the rolled-out dough, then sprinkle the cinnamon-sugar mixture evenly on top.
  9. Carefully roll the dough into a log shape and cut it into 1/2 inch thick slices.
  10. Place the slices onto the prepared baking sheets and bake for 10-12 minutes or until the edges are lightly golden.
  11. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
