- 1 teaspoon baking powder
- ½ teaspoon salt
- ¾ cup salted butter (softened at room temperature)
- 1 cup granulated sugar
- 2 large eggs (at room temperature)
- 1 teaspoon vanilla extract
- ½ teaspoon almond extract (or ¼ teaspoon for a more subtle flavor)
- 3 cups powdered sugar (sifted)
- 3–4 tablespoons milk
- 2 tablespoons light corn syrup
- ½ teaspoon vanilla extract (for icing)
- Gel food coloring (optional)
Instructions
- In a large bowl, whisk together the flour, baking powder, and salt.
- In a separate large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla and almond extracts.
- Gradually add the flour mixture to the butter mixture, mixing on low until a soft dough forms.
- Divide the dough into two portions, roll to about ¼ inch thickness, and refrigerate for 1-2 hours.
- Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
- Cut out desired shapes from the chilled dough and arrange them on the prepared baking sheets.
- Bake for 8-10 minutes until edges are lightly browned, then cool on wire racks.
- For icing, whisk together powdered sugar, milk, corn syrup, and vanilla extract, adding food coloring if desired.
Notes
Use room temperature ingredients for best results. Do not skip chilling the dough to maintain cookie shapes.
