Juicy Greek meatballs in a rich lemon sauce, combining ground beef with arborio rice for a unique texture.

- 1 lb ground beef
- 1 small onion, finely grated
- 1/4 cup arborio rice, uncooked
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh dill, chopped
- 1 egg
- Salt and black pepper, to taste
- 1/2 teaspoon dried oregano
- 4 cups chicken broth
- 2 tablespoons olive oil
- 2 eggs
- Juice of 2 lemons (about 1/4 cup)
- Salt and pepper, to taste
Instructions
- In a large mixing bowl, combine the ground beef, grated onion, uncooked rice, parsley, dill, egg, oregano, salt, and pepper. Mix until combined.
- Shape mixture into meatballs about the size of golf balls and chill in the refrigerator for 15-20 minutes.
- Simmer the chicken broth and olive oil in a wide pot over medium heat, then add the meatballs to cook on low heat for about 30 minutes.
- Whisk together the eggs and lemon juice, temper with hot broth, then add back to the pot to thicken the sauce.
- Serve warm, garnished with extra dill or lemon wedges.
Notes
Use fresh herbs for best flavor and let the mixture rest for easier shaping.
