Description

Juicy Greek meatballs in a rich lemon sauce, combining ground beef with arborio rice for a unique texture.


Ingredients

  • 1 lb ground beef
  • 1 small onion, finely grated
  • 1/4 cup arborio rice, uncooked
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh dill, chopped
  • 1 egg
  • Salt and black pepper, to taste
  • 1/2 teaspoon dried oregano
  • 4 cups chicken broth
  • 2 tablespoons olive oil
  • 2 eggs
  • Juice of 2 lemons (about 1/4 cup)
  • Salt and pepper, to taste

Instructions

  1. In a large mixing bowl, combine the ground beef, grated onion, uncooked rice, parsley, dill, egg, oregano, salt, and pepper. Mix until combined.
  2. Shape mixture into meatballs about the size of golf balls and chill in the refrigerator for 15-20 minutes.
  3. Simmer the chicken broth and olive oil in a wide pot over medium heat, then add the meatballs to cook on low heat for about 30 minutes.
  4. Whisk together the eggs and lemon juice, temper with hot broth, then add back to the pot to thicken the sauce.
  5. Serve warm, garnished with extra dill or lemon wedges.

Notes

Use fresh herbs for best flavor and let the mixture rest for easier shaping.
