Description
Moist and tender sour cream coffee cake with a buttery cinnamon streusel perfect for breakfast, brunch, or dessert with a cup of coffee.
Ingredients
2 1/4 cups all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
3/4 cup unsalted butter, softened
1 1/4 cups granulated sugar
3 large eggs
1 tsp vanilla extract
1 cup sour cream
Streusel Topping:
1/2 cup light brown sugar
2 tsp ground cinnamon
1/4 cup all-purpose flour
1/4 cup cold unsalted butter, cubed
Instructions
1. Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish.
2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
3. In a large bowl, cream butter and sugar until light and fluffy.
4. Beat in eggs one at a time, then add vanilla extract.
5. Mix in sour cream until well blended.
6. Gradually add dry ingredients to wet mixture, stirring until just combined.
7. In a small bowl, combine brown sugar, cinnamon, and flour for the streusel. Cut in cold butter until crumbly.
8. Spread half the batter into prepared baking dish. Sprinkle with half the streusel mixture.
9. Spread remaining batter on top, then finish with the rest of the streusel.
10. Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
11. Cool slightly before slicing and serving.
Notes
You can add chopped pecans or walnuts to the streusel for extra crunch.
Cake can be baked a day ahead and stored covered at room temperature.
Pairs wonderfully with a cup of hot coffee or tea.
