Description

This Southern Maple Sweet Potato Casserole is a comforting dish perfect for holidays and family gatherings. The sweetness from the maple syrup and marshmallows blends wonderfully with the creamy sweet potatoes, creating a delicious harmony of flavors.

Ingredients

Scale
  • 2 pounds sweet potatoes
  • ½ cup maple syrup
  • 2 cups mini marshmallows
  • ½ cup raisins
  • 1 cup chopped pecans
  • ¼ cup butter (or vegan substitute)
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Peel and chop the sweet potatoes, then boil them until tender.
  3. Drain and mash the sweet potatoes in a large bowl.
  4. Stir in maple syrup, melted butter (or vegan substitute), cinnamon, vanilla extract, and salt until well combined.
  5. Spread the sweet potato mixture into a baking dish.
  6. Top with marshmallows, raisins, and chopped pecans.
  7. Bake for about 25-30 minutes or until the marshmallows are golden brown.
  8. Serve warm as a side dish during the holidays.

Notes

To make peeling easier, soak the sweet potatoes in warm water for a few minutes. For extra flavor, try adding a dash of nutmeg or ginger to the mixture.
