Description

A comforting Southern Maple Sweet Potato Casserole with sweet flavors, creamy texture, mini marshmallows, and a crunchy pecan topping.


Ingredients

  • 3 cups roasted sweet potatoes
  • 1/2 cup maple syrup
  • 1/2 cup brown sugar
  • 1 cup raisins
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 2 cups mini marshmallows
  • 1 cup chopped pecans
  • 1/4 cup melted vegan butter
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mash the roasted sweet potatoes until smooth.
  3. Stir in maple syrup, brown sugar, raisins, cinnamon, nutmeg, and vanilla.
  4. Fold in the mini marshmallows.
  5. Transfer the mixture to a greased baking dish.
  6. Mix chopped pecans with melted vegan butter and sprinkle on top.
  7. Bake for 25-30 minutes until golden and heated through.
  8. Cool slightly before serving.
