- 3 cups roasted sweet potatoes
- 1/2 cup maple syrup
- 1/2 cup brown sugar
- 1 cup raisins
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 2 cups mini marshmallows
- 1 cup chopped pecans
- 1/4 cup melted vegan butter
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C).
- Mash the roasted sweet potatoes until smooth.
- Stir in maple syrup, brown sugar, raisins, cinnamon, nutmeg, and vanilla.
- Fold in the mini marshmallows.
- Transfer the mixture to a greased baking dish.
- Mix chopped pecans with melted vegan butter and sprinkle on top.
- Bake for 25-30 minutes until golden and heated through.
- Cool slightly before serving.
Notes
For a make-ahead option, prepare the sweet potato mixture a day prior, refrigerate, then bake with topping when needed.
