Description

A comforting, soul-satisfying dish featuring tender chicken coated in rich, creamy gravy.


Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 4 bone-in, skin-on chicken drumsticks
  • 1 cup all-purpose flour
  • 1 tablespoon paprika
  • 1 tablespoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1/2 teaspoon cayenne pepper
  • 3 tablespoons vegetable oil or bacon grease
  • 1 large onion, thinly sliced
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon fresh thyme leaves, chopped (or 1/2 dried thyme)
  • 1 tablespoon parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the flour, paprika, garlic powder, onion powder, black pepper, salt, and cayenne pepper. Mix well.
  3. Coat the chicken pieces in the seasoned flour, shaking off excess.
  4. Heat vegetable oil or bacon grease in a large skillet over medium-high heat. Add chicken skin-side down and cook until golden brown, about 5-7 minutes per side. Remove and set aside.
  5. In the same skillet, sauté sliced onion until soft, about 5 minutes. Add minced garlic and sauté for another minute.
  6. Sprinkle in 2 tablespoons of seasoned flour and mix well. Gradually add chicken broth, stirring to avoid lumps. Simmer for 5 minutes.
  7. Stir in heavy cream, Worcestershire sauce, and thyme leaves, simmer for an additional 2 minutes until thickened.
  8. Return the chicken pieces to the skillet skin-side up, cover, and transfer to the oven. Bake for 25-30 minutes until cooked through.
  9. Sprinkle with chopped parsley and serve over rice, mashed potatoes, or grits.

Notes

For a richer flavor, use homemade chicken broth. Adjust the spices to your taste for additional heat.
