- 4 bone-in, skin-on chicken thighs
- 4 bone-in, skin-on chicken drumsticks
- 1 cup all-purpose flour
- 1 tablespoon paprika
- 1 tablespoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon black pepper
- 1 teaspoon salt
- 1/2 teaspoon cayenne pepper
- 3 tablespoons vegetable oil or bacon grease
- 1 large onion, thinly sliced
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1/2 cup heavy cream
- 2 teaspoons Worcestershire sauce
- 1 teaspoon fresh thyme leaves, chopped (or 1/2 dried thyme)
- 1 tablespoon parsley, chopped (for garnish)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the flour, paprika, garlic powder, onion powder, black pepper, salt, and cayenne pepper. Mix well.
- Coat the chicken pieces in the seasoned flour, shaking off excess.
- Heat vegetable oil or bacon grease in a large skillet over medium-high heat. Add chicken skin-side down and cook until golden brown, about 5-7 minutes per side. Remove and set aside.
- In the same skillet, sauté sliced onion until soft, about 5 minutes. Add minced garlic and sauté for another minute.
- Sprinkle in 2 tablespoons of seasoned flour and mix well. Gradually add chicken broth, stirring to avoid lumps. Simmer for 5 minutes.
- Stir in heavy cream, Worcestershire sauce, and thyme leaves, simmer for an additional 2 minutes until thickened.
- Return the chicken pieces to the skillet skin-side up, cover, and transfer to the oven. Bake for 25-30 minutes until cooked through.
- Sprinkle with chopped parsley and serve over rice, mashed potatoes, or grits.
Notes
For a richer flavor, use homemade chicken broth. Adjust the spices to your taste for additional heat.
