- 2 cups potatoes, peeled and diced
- 1 cup pierogi (store-bought or homemade)
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- In a large pot, sauté the chopped onion and minced garlic until translucent.
- Add the diced potatoes and chicken or vegetable broth. Bring to a boil, then reduce to a simmer and cook until the potatoes are tender.
- Stir in the pierogi and cook for another 5-7 minutes until they are heated through.
- Add the heavy cream and season with salt and pepper to taste.
- Serve hot, garnished with chopped green onions.
Notes
Use fresh ingredients for best flavor. Adjust thickness by mashing some potatoes before adding pierogi. Experiment with different broths for varied flavor profiles.
