Description

Ingredients

  • 1 lb. Chicken Breasts (cut into 1″ strips)
  • 1 (15 oz.) can Diced Tomatoes
  • 1 cup Heavy Cream
  • 1 1/2 cups Cheddar Cheese (shredded)
  • 1 cup Onion (chopped)
  • 4 Garlic Cloves (minced)
  • 1 tbsp Honey
  • 1 tbsp Olive Oil
  • 1 tbsp Butter
  • 2 tbsp Cilantro (chopped)
  • 1 1/2 tsp Chili Powder
  • 1/2 tsp Cumin
  • 1/2 tsp Oregano
  • 1 tsp Paprika
  • 1/4 tsp Black Pepper
  • 1/2 tsp Salt
  • 1/8 tsp Cayenne

Instructions

  1. Prepare the Seasoning: In a small bowl, mix together the chili powder, cumin, oregano, paprika, black pepper, salt, and cayenne.
  2. Season the Chicken: Add the cut chicken to a large bowl. Drizzle in honey and add half of the seasoning mix. Toss to coat.
  3. Cook the Pasta: Bring a large pot of water to a boil, then cook the penne pasta according to package instructions until al dente.
  4. Cook the Chicken: In a large skillet, heat olive oil over medium heat, add the chicken, and cook until golden brown, about 5 minutes.
  5. Sauté Onions and Garlic: In the same skillet, add chopped onions and butter, cook until tender, then add minced garlic and diced tomatoes.
  6. Create the Sauce: Slowly pour in the heavy cream while stirring, and bring to a simmer. Add chicken and cheese, stirring until melted.
  7. Combine and Serve: Add the cooked penne, toss to combine, and garnish with cilantro.
