Description

A flavorful and nutritious bowl featuring grilled chicken, vibrant toppings, and a zesty marinade, perfect for any meal occasion.

Ingredients

Scale
  • 2 large chicken breasts
  • 1 tbsp olive oil
  • 1 tbsp lime juice
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 0.5 tsp cumin
  • 0.5 tsp garlic powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 cups cooked rice (white or brown)
  • 1 cup black beans (rinsed and drained)
  • 1 cup corn kernels (grilled or canned)
  • 1 cup cherry tomatoes (halved)
  • 1 avocado (sliced)
  • 0.25 cup red onion (finely diced)
  • Fresh cilantro (for garnish)
  • Lime wedges (for serving)

Instructions

  1. Make the Marinade: In a bowl, whisk together the olive oil, lime juice, and spices—chili powder, smoked paprika, cumin, garlic powder, salt, and black pepper.
  2. Marinate the Chicken: Coat the chicken breasts in the marinade, ensuring they are well covered. Let them marinate for at least 15 minutes; if you have more time, up to 2 hours is even better.
  3. Cook the Chicken: Grill or pan-fry the marinated chicken for about 5–6 minutes on each side until fully cooked and has nice grill marks. Let it rest before slicing.
  4. Prepare the Base: While the chicken cooks, prepare your rice and chop your toppings: black beans, corn, cherry tomatoes, avocado, and red onion.
  5. Assemble the Bowls: Start with a scoop of rice in each bowl. Layer on the black beans, corn, cherry tomatoes, avocado slices, and finally the sliced chicken.
  6. Final Touches: Top with fresh cilantro, a squeeze of lime juice, and serve with lime wedges on the side.
