- 0.75 lb Boneless, skinless chicken breasts
- ¼ cup Lime juice
- ½ tsp Chili powder
- ½ tsp Onion powder
- 1 tsp Garlic powder
- ½ tsp Smoked paprika
- ¼ tsp Salt
- 3 tbsp Olive oil
- 1 Tbsp Chipotle pepper in adobo
- 4 Large tortillas
- 1 cup Uncooked rice
- 1 Small red bell pepper
- 1 Jalapeño
- ½ Red onion, sliced
- 3 Garlic cloves, minced
- 1 tsp Olive oil
- ¾ cup Corn kernels
- 1 cup Black beans
- ¼ cup Cotija cheese
- â…“ cup Sour cream
- 1½ Tbsp Honey
- ½–1 Tbsp Chipotle peppers in adobo
- 1 Tbsp Lime juice
- 3 Tbsp Fresh cilantro, chopped
- 1–2 Tbsp Water
- ¼ tsp Salt
Instructions
- Marinate the chicken: Start by dicing the chicken into bite-sized pieces. In a bowl, combine the lime juice, olive oil, chili powder, onion powder, garlic powder, smoked paprika, salt, and chipotle pepper. Add the chicken and let it marinate for at least 15 minutes.
- Cook the rice: While your chicken is marinating, cook the rice according to package instructions.
- Sauté the chicken: Heat a skillet over medium heat and add the marinated chicken. Cook for around 12–15 minutes until cooked through.
- Cook the veggies: In the same skillet, toss in the sliced red bell pepper, jalapeño, and red onion. Sauté until tender. Add the minced garlic and the cooked chicken back into the skillet.
- Assemble the wraps: Grab a tortilla and layer it with cooked rice, the chicken mixture, black beans, corn, and sprinkle cotija cheese. Drizzle with the creamy mixture of sour cream, honey, chipotle, lime juice, cilantro, and salt.
- Roll and serve: Roll the tortilla tightly like a burrito, then cut it in half to reveal the colorful filling. Serve immediately.
Notes
Let the chicken rest after cooking to retain its juices. Don’t overstuff the wraps for easier handling.
