Description

A deliciously satisfying Southwest Chicken Wrap that combines grilled marinated chicken with fresh veggies and a creamy chipotle sauce, perfect for lunch or dinner.


Ingredients

  • 0.75 lb Boneless, skinless chicken breasts
  • ¼ cup Lime juice
  • ½ tsp Chili powder
  • ½ tsp Onion powder
  • 1 tsp Garlic powder
  • ½ tsp Smoked paprika
  • ¼ tsp Salt
  • 3 tbsp Olive oil
  • 1 Tbsp Chipotle pepper in adobo
  • 4 large Tortillas
  • 1 cup Uncooked rice
  • 1 small Red bell pepper
  • 1 Jalapeño
  • ½ Red onion, sliced
  • 3 Garlic cloves, minced
  • 1 tsp Olive oil
  • ¾ cup Corn kernels
  • 1 cup Black beans
  • ¼ cup Cotija cheese
  • â…“ cup Sour cream
  • 1½ Tbsp Honey
  • ½1 Tbsp Chipotle peppers in adobo
  • 1 Tbsp Lime juice
  • 3 Tbsp Fresh cilantro, chopped
  • 12 Tbsp Water
  • ¼ tsp Salt

Instructions

  1. Marinate the chicken: Start by marinating the diced chicken in lime juice, olive oil, seasonings, and chipotle for at least 15 minutes.
  2. Cook the rice: While the chicken is marinating, cook the rice according to the package instructions.
  3. Sauté the chicken: In a skillet over medium heat, sauté the marinated chicken for 12–15 minutes until it’s cooked through.
  4. Cook the vegetables: In the same skillet, add chopped red bell pepper, jalapeño, and sliced onion; sauté until tender, then add minced garlic and cooked chicken.
  5. Assemble the wraps: Take a tortilla and layer it with rice, the chicken mixture, beans, corn, cheese, and a drizzle of the sauce.
  6. Roll & serve: Roll the tortilla tightly and serve immediately, or toast it for a crispy exterior.

Notes

For deeper flavor, marinate the chicken longer, even overnight. Pack on the fresh herbs and add extra veggies for a healthier wrap.
