- 2 Grilled chicken breasts
- 4 Tortilla wraps
- 1 can Black beans, drained
- 1 cup Corn
- 1 Avocado, diced
- 1 cup Shredded cheese
- 1 cup Lettuce, shredded
- 1/2 cup Sour cream
- 1/2 cup Salsa
- Spices (cumin, chili powder, salt, pepper)
Instructions
- Grill the chicken breasts until cooked through and charred. Let rest for a few minutes before slicing.
- In a bowl, mix black beans, corn, diced avocado, and spices.
- Lay a tortilla flat and add grilled chicken, bean-corn mixture, cheese, and lettuce.
- Drizzle with sour cream and salsa.
- Roll the tortilla tightly and slice in half.
- Serve immediately with extra salsa on the side.
Notes
For a lighter option, use Greek yogurt instead of sour cream. You can also prepare the filling ahead of time to save on prep.
