Instructions
- Add the ground beef, onion, bell pepper, and minced garlic to a skillet over medium heat. Break the beef into large chunks and cook until browned, draining any excess fat.
- Stir in chili powder, cumin, salt, pepper, garlic powder, oregano, and red pepper flakes, cooking while stirring for about 1 minute.
- Mix in cubed sweet potatoes, black beans, and water. Stir until combined, lower heat to medium-low, and cover. Cook for 15-20 minutes until sweet potatoes are tender.
- Remove the lid and cook for an additional 2-3 minutes to evaporate remaining liquid.
- Off the heat, add shredded cheese (if using) and cover for about 5 minutes to melt the cheese.
- Serve with toppings like cilantro, avocado, or sour cream.
Notes
Consider adding fresh jalapeños for extra heat or topping with Greek yogurt for a twist instead of sour cream.
