  • ½ cup yellow onion, diced
  • ½ cup red bell pepper, diced
  • 2 cloves garlic, minced
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon oregano

  • 3 cups sweet potatoes, peeled and cubed
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 cup water
  • 1 cup shredded cheese, optional

Instructions

  1. Brown the meat and vegetables by adding the ground beef, diced onion, red bell pepper, and minced garlic to a skillet over medium heat. Cook until browned, draining any excess fat.
  2. Add the spices, sprinkling in the chili powder, cumin, salt, pepper, garlic powder, oregano, and red pepper flakes. Stir continuously for about one minute.
  3. Combine the remaining ingredients by adding cubed sweet potatoes, rinsed black beans, and water. Stir well, cover the skillet, reduce the heat to medium-low, and cook for 15-20 minutes until sweet potatoes are fork-tender.
  4. Evaporate excess liquid by removing the lid and simmering for an additional 2-3 minutes.
  5. Finish with cheese by removing from heat, sprinkling cheese over the top, covering, and letting it sit for about 5 minutes before serving hot with toppings.

Notes

Add toppings such as sliced avocado, salsa, cilantro, or sour cream for added flavor. Adjust spice levels based on preference.
