Description

A delightful spiced carrot cake layered with rich cream cheese mousse and topped with crunchy walnuts, perfect for any occasion.

Ingredients

Scale
  • 2 cups grated carrots
  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 cup cream cheese, softened
  • 1/2 cup walnuts, chopped
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a cake pan to ensure the cake releases easily after baking.
  2. Combine the grated carrots, sugar, melted butter, eggs, and vanilla extract in a large bowl. Mix well until it’s all combined and the carrots are well-coated.
  3. Whisk together the all-purpose flour, baking powder, baking soda, salt, and cinnamon in another bowl.
  4. Add the dry ingredients to the wet mixture and stir until just combined. Gently fold in the chopped walnuts.
  5. Pour the batter into the prepared cake pan and bake for 25-30 minutes. Check for doneness by inserting a toothpick into the center; if it comes out clean, your cake is ready.
  6. Beat the softened cream cheese until it’s smooth, then mix in a little sugar and vanilla to sweeten it up while the cake bakes.
  7. Spread the creamy mousse over the cooled cake for a luscious finish.
  8. Mix chopped walnuts with a sprinkle of cinnamon and sugar for the crunch, and evenly sprinkle this mixture over the mousse.
  9. Slice and serve your delicious cake to enjoy!

Notes

For optimal freshness, store the cake in the refrigerator. Keep the mousse separate until you’re ready to serve to maintain crunch.
