- 3 cloves garlic, minced
- 2–3 red chilies, chopped
- 2 tablespoons soy sauce
- 1 tablespoon vegetable oil
- 1 bell pepper, sliced
- 1 carrot, julienned
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- Cook the noodles according to the package instructions, drain well, and rinse briefly in cold water.
- In a large pan, heat vegetable oil over medium heat until it shimmers.
- Add minced garlic and chopped chilies, sauté for 1-2 minutes until fragrant.
- Toss in sliced bell pepper and julienned carrot, cooking for another 3-4 minutes until tender but crisp.
- Add the cooked noodles, drizzle in soy sauce, salt, and pepper, stirring for about 2 minutes until evenly coated.
- Toss in chopped green onions before serving warm.
Notes
For a gluten-free version, use rice noodles and ensure soy sauce is gluten-free. Adjust chili quantity for desired spiciness.
