- 1 lb chicken breast
- 4 cups chicken broth
- 1 cup cream cheese
- 1 cup shredded cheddar cheese
- 1 cup jalapeños, chopped
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add chopped onions and garlic, sauté until fragrant (2-3 minutes).
- Add chicken breasts and cook until browned on both sides.
- Pour in chicken broth, bring to a boil, then reduce heat and simmer.
- After about 15 minutes, remove chicken, shred it, and return it to the pot.
- Stir in cream cheese, cheddar cheese, jalapeños, cumin, salt, and pepper.
- Cook until cheese is melted and well combined.
