Description

Ingredients

  • 4 jalapeños, diced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup cream cheese
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup milk
  • Salt and pepper to taste
  • Butter for grilling
  • 4 slices of bread
  • 1 cup additional cheddar cheese for dippers

Instructions

  1. In a large pot, sauté diced jalapeños, onion, and minced garlic in a bit of oil until softened.
  2. Add the broth and bring to a simmer.
  3. Stir in the cream cheese and milk until blended.
  4. Add sharp cheddar cheese and stir until melted.
  5. Season with salt and pepper to taste.
  6. For the grilled cheese dippers, butter the bread and place a slice of cheddar cheese between two slices.
  7. Grill on a skillet until golden brown and the cheese is melted.
  8. Serve the soup hot, with grilled cheese dippers on the side.

Notes

Consider removing the seeds from jalapeños for a milder flavor. Leftovers can be stored in the fridge for up to three days.
