- 4 jalapeños, diced
- 1 small onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup cream cheese
- 1 cup sharp cheddar cheese, shredded
- 1 cup milk
- Salt and pepper to taste
- Butter for grilling
- 4 slices of bread
- 1 cup additional cheddar cheese for dippers
Instructions
- In a large pot, sauté diced jalapeños, onion, and minced garlic in a bit of oil until softened.
- Add the broth and bring to a simmer.
- Stir in the cream cheese and milk until blended.
- Add sharp cheddar cheese and stir until melted.
- Season with salt and pepper to taste.
- For the grilled cheese dippers, butter the bread and place a slice of cheddar cheese between two slices.
- Grill on a skillet until golden brown and the cheese is melted.
- Serve the soup hot, with grilled cheese dippers on the side.
Notes
Consider removing the seeds from jalapeños for a milder flavor. Leftovers can be stored in the fridge for up to three days.
