- 1/2 cup flour
- 1/2 cup cornmeal
- 1/2 teaspoon chili powder
- 1/4 teaspoon cumin
- 1/4 teaspoon salt

- 1/4 cup chopped cilantro
- 1 egg
- 1/2 cup milk
- Oil for frying
Instructions
- In a bowl, mix corn, flour, cornmeal, chili powder, cumin, salt, and pepper.
- Stir in shredded cheese and chopped cilantro.
- In another bowl, beat the egg and mix it with the milk.
- Combine the wet ingredients with the dry ingredients until just mixed.
- Heat oil in a frying pan over medium heat.
- Drop spoonfuls of the mixture into the hot oil, flattening them slightly.
- Fry until golden brown on each side, about 2-3 minutes.
- Drain on paper towels and serve warm.
Notes
Ensure the oil is hot enough before frying for a crispy texture. Use fresh corn for better flavor. You can add jalapeños for extra heat or replace cilantro with parsley for a different herb.
