- 1 cup cream cheese, softened
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup cooked bacon, crumbled
- 1/2 cup canned corn, drained
- 1 can (4 oz) diced green chilies
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper
- 1/2 cup diced red bell pepper
- 2 green onions, finely chopped
- Salt and black pepper to taste
- Tortilla chips or crusty bread for serving
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the softened cream cheese and sour cream until smooth.
- Stir in the cheddar cheese, crumbled bacon, corn, green chilies, smoked paprika, and cayenne pepper.
- Add diced red bell pepper and green onions, then season with salt and black pepper. Mix until combined.
- Transfer the mixture to a 1-quart baking dish and spread it evenly.
- Bake for 20-25 minutes until heated through and the top is slightly golden.
- Remove from the oven and let cool for a few minutes before serving. Serve warm with tortilla chips or bread.
Notes
Make sure to soften your cream cheese for a smooth mixture. For a vegetarian version, use smoked tempeh instead of bacon.
