Description

A comforting dish featuring soft rice noodles tossed in a rich peanut sauce with tender chicken, balanced by sweetness from honey and a kick from sriracha.


Ingredients

  • 8 oz rice noodles
  • 1 lb chicken breast, sliced
  • 1/2 cup peanut butter
  • 1/4 cup soy sauce
  • 2 tbsp honey
  • 2 tbsp lime juice
  • 1 tbsp sriracha sauce
  • 2 cloves garlic, minced
  • 1/4 cup chopped green onions
  • 1/4 cup chopped cilantro
  • 1 tbsp sesame oil
  • Salt and pepper to taste

Instructions

  1. Cook the rice noodles according to package instructions, then drain and set aside.
  2. In a large skillet, heat sesame oil over medium heat and add sliced chicken. Cook until browned and cooked through.
  3. In a bowl, whisk together peanut butter, soy sauce, honey, lime juice, sriracha, and minced garlic until smooth.
  4. Add the cooked noodles to the skillet with the chicken and pour the peanut sauce over the top.
  5. Toss everything together until the noodles are well coated in the sauce.
  6. Season with salt and pepper to taste.
  7. Garnish with chopped green onions and cilantro before serving.

Notes

For added crunch, consider topping with crushed peanuts or sesame seeds.
